Recipe: Strawberry Apple Rhubarb Compote

It’s rhubarb season once again, everyone! đŸ™‚

What is rhubarb you ask? It is a plant that grows with thick red/pink stalks and broad green leaves. The stalks are harvested and used in a variety of recipes, typically pies. The leaves are not eaten because the are toxic. Rhubarb has a very tart flavor when eaten raw so it is normally cooked with something sweet to offset the tartness (similar to cranberries). To celebrate the awakening of rhubarb into this Spring season of 2010, here is a recipe that encompasses some loving rhubarb-ness.

Strawberry Apple Rhubarb Compote

Ingredients:

  • 1 small bunch rhubarb (yielding about 2 C chopped)
  • 2 C strawberries, hulled and chopped
  • 1 large apple, finely diced
  • 2/3 C brown sugar, loosely packed
  • 2/3 C water
  • 1 T fine grated ginger
  • 1 tsp vanilla
  • 1 medium/large lemon, zest and juice
  • pinch of salt

Directions:

  1. Rinse and dry the rhubarb. Line each stalk side by side and chop off both ends (usually they are tough) about 1/2″. Discard the ends and chop the stalks.
  2. In a large pot on the stove, place chopped rhubarb with brown sugar and water over medium heat. Bring to a boil and slower just a bit so that it is still simmering.
  3. While the rhubarb is cooking, prepare remaining ingredients and set aside.
  4. Once the rhubarb begins to emulsify and break down from its original form, add remaining ingredients slowly by folding in. Make sure the stove is still at a medium low heat. Cook ingredients for about 8 minutes longer or until the diced apple has become tender.
  5. Remove from heat and allow to cool.
  6. Serve warm, or store in an air tight container. I think this is best stores in a glass jar. Refrigerate!

This compote can be used as a jam, marinade, or even by itself with some plain yogurt. Get creative and use it wherever you’d like. It’s a sweet surprise with a spicy kick. Fresh pick of the season!
