Hope for Haiti

So I went on my run this afternoon, RAIN-FREE! There was actually some sun peeking out from behind the clouds, it was very pleasant! After my 3.5 mile run I did some core training at the gym with two of my buddies. I’m hoping I won’t feel too sore tomorrow..

For lunch I had leftover pasta salad…

I made so much pasta salad last night for dinner, that there was enough left over for lunch. In my salad, I used spinach penne, garbanzo beans, and a mix of roasted zucchini, bell pepper, and asparagus. I think what made the salad taste so good was a walnut-cilantro pesto I made to toss everything with. Along with my salad I had an orange.

Later on in the day after doing some chores I had an afternoon snack of cottage cheese and some crackers. I’ve recently started introducing a little more dairy in my diet than usual, and I and loving every minute of it. I wasn’t forcefully trying to eat a vegan diet, it kind of just happened. I strongly believe in balance though and keeping an equilibrium with your body. I think live active culture are something good to consume in your system!

For dinner I made yet another salad!

This salad consisted of cherry tomatoes, sorrel, sheep’s milk feta, green onions and cilantro. I tossed it all with olive oil, and lemon juice.

And how could I forget dessert?

Avocado pudding!!! This is the yummiest treat ever. And here is the recipe!

  • 1 ripe avocado, diced (preferably one with a smooth skin)
  • 6-8 chopped dates
  • 1/2 C coconut milk
  • 2 tsp vanilla extract
  • 2 spoonfuls cocoa powder

Place avocado and dates in a food processor with the ‘S’ blade in place. After those ingredients have blended well, add vanilla and slowly add the coconut milk and lastly cocoa powder. Blend for 3 more minutes or until creamy. Best after being chilled in the fridge. Serves 3.

I just finished watching the Hope for Haiti telethon. It was very emotional to hear the stories of those who have suffered the loss of a family members, and the stories of those who are survivors of the tragedy.

My family and I were able to give to the American Red Cross. Even though we made that donation, I still feel that I am so limited in what I can do to help.

It is comforting to see the nation really pull together to help those in need in Haiti. Let us be reminded that it is in times of despair that faith, hope and love always prevail. I can only hope that all the charitable efforts being made in Haiti will continue to blossom, and hopefully the same efforts can be extended throughout the world as well.
